Pea Shoots

Description:

Our pea shoots have a small, curved tendril followed by three to four pairs of leaves.  

Texture:

Crisp.

Flavor:

Sweet and nutty.

History:

Peas are one of the oldest known cultivated plants.  Thought to originate in Asia some 12,000 years ago, peas were harvested in the early spring just when the shoots were beginning to show.  Generally left to grow to full size, these pea shoots form a legume commonly called the snow pea.

Health Benefits:

Pea shoots are incredibly high in vitamins A, C and folic acid.

Pairing:

Add to any salad for a fresh bite of nutty pea flavor.  Use as a sprightly garnish for delicate items as well as for most seafood and poultry dishes.
